I make yummy biscotti from a recipe (on my blog if you are interested) from my Italian neighbor drizzled with melted dark chocolate. They are to die for!

sounds yum! These are the cookies I make every Christmas. A TON of them. I don’t like making a huge variety of cookies, I just like to give these.

    Biscochitos (Mexican shortbread cookie)

    1 ½ C. Sugar
    3 t. Baking Powder
1 Lb. Lard (the one in the block)
    1 t. Anise Seeds
    2 Eggs
    6 C. Flour
Small Glass of Brandy or Wine (optional)

    Topping, mixed together:
    ½ C. Sugar 1 t. Cinnamon

Preheat oven to 325° Cream together shortening & sugar. Add eggs and anise seeds, mix again. Sift dry ingredients & mix with wet ingredients. Add brandy or wine & blend. Roll out on floured surface, to ¼ to ½ inch thickness. Cut shapes with cookie cutters. Bake 10-15 minutes on ungreased cookie sheet, or until light brown. Do not over bake. When done, sprinkle with cinnamon/sugar mix.

How about instead of cookies would you like a recipe for the best caramel corn you’ll ever have??? Yumm. I’ve got a great sugar cookie recipe, too. If you want them email me. Hugs.

Mmmmm, those sound yummy! I found a recipe last year that I just love. Basically it is a shortbread recipe that you bake a toblerone triangle piece in the middle. Salivating just thinking about them, they go perfectly with a tasty latte.

Our most favorite cookie recipe since the early 1990’s is that famous Neiman Marcus Cookie. Since learning about it, I’ve made it every Christmas. It doubles and triples easily, and makes bunches!!!
    Neiman Marcus Cookies
2 cups butter 1 tsp. salt
2 cups sugar 2 tsp. baking powder
2 cups brown sugar 2 tsp. soda
4 eggs 24 oz. chocolate chips
2 tsp. vanilla 1-8 oz. Hershey bar, grated
4 cups flour 3 cups chopped nuts
    5 cups blended oatmeal*

Cream butter and both sugars. Add eggs and vanilla. Mix together with
flour, oatmeal, salt, baking powder and soda. Add chocolate chips, Hershey
bar and nuts. Roll into balls and place two inches apart on a cookie sheet.
Bake for 10 minutes at 375. Makes 112 cookies (recipe may be halved).

    * Measure oatmeal and blend in a blender to a fine powder.

I’d love to have Sue B.’s caramel corn recipe!!! And Sherrie’s cookie recipe….well, everyone’s if there is a way to send them to me!!!

    BTW, love your blog!!!

I have a Gloss Cinnamon KA too! Mine’s name is Betsy. She looks down on the Empire Red mixers (which I had planned to get but GC was on sale so GC it was, don’t tell her though) and doesn’t even look at other colors at all. :)

I really liked the chocolate chip cookies that were in the little recipe book that came with the mixer. Do you have those. I’ll go look and type it in.

    1 cup granulated sugar
    1 cup brown sugar
1cup butter (it says or margarine, but use butter)
    2 eggs
    1 1/2 teaspoons vanilla
    1 teaspoon baking soda
    1 teaspoon salt
    3 cups all purpose flour
    12 oz semisweet chocolate chips

sugars, butter, eggs and vanilla in bowl, flat beater , Speed 2 for 30 seconds. Sthop and scrape bowl. Turn to speed 4 and beat for 30 seconds. Stop and scrape bowl.

Turn to Stir speed, gradually add baking soda, salt and flour and mix 2 minutes. Turn to speed 2 and mix 30 seconds. Stop and scrape bowl. Add chips , put on Stir and mix for about 15 seconds.

    Bake them at 375.

course you can add in anything you like, macadamia… white chocolate, anything really.

Also do youy have “Kitchen Aid Great Baking and more” It’s a book that’s all for the KA mixers. So all the recipies read like this one, you know, to go with your mixer. It’s really good. Apparently it’s been out for a while because I got it at the bargain table of the bookstore for just $7.98.

    Enjoy your baking. :)

I’ll have to try the biscotti. I love anything with cranberries. The inchie magnets are adorable. Looks like my stamping group will be getting some for Christmas. Thanks for including the great pictures and all the steps.

Hi Trudee, The cookies that are your favorites are mine as well. I love Mexican Wedding Cake (sometimes called Swedish Teacakes or Russian Teacakes)! I recently made the Magic Cookie Bars (making them since the 1980’s) - my husband never had them before & loves them! Other favorites are Snickerdoodles (easy) & Peanut Butter cookies with a chocolate kiss on top - peanut butter & chocolate, yum-o!!!

Here is a cookie recipe I made last year & gave as gifts.

    Enjoy, Eileen

    **********
    CRANBERRY WHITE CHOCOLATE CHIP COOKIES

    2-1/4 cups flour
    1 tsp. Baking soda
    1 tsp. Salt
    1 cup rolled oats
    2/3 cup light brown sugar
    2/3 cup sugar
    1 cup butter, softened
    2 large eggs
    1 tsp. Vanilla
    1-1/2 cup Craisins® (dried cranberries)
    1 cup white chocolate chips
    1 cup chopped pecans

    Preparation -
Mix flour, baking soda, salt and oats together, then set aside. In a large mixing bowl, beat softened butter, both kinds of sugar, and eggs together until light and fluffy. Mix in vanilla. Add the flour mixture and stir until well blended. Add the white chocolate chips, Craisins®, and chopped pecans. Stir all the ingredients together, by hand, until well blended. Spray cookie sheets with non-stick cooking spray. Drop by heaping spoonfuls onto the prepared cookie sheets. Bake at 350° for 10 minutes, or edges of cookies are very lightly browned. Remove from oven, cool on cookie sheets for about a minute, then remove cookies to wire racks to cool completely.

Oh….Trudee, I have one more to share! This one is rich to eat & a family tradition. My great-grandmother used to make these! I’ve been making these since I was a little girl.

    UNCOOKED CHOCOLATE BALLS

    Mix together:
    3 cups Quaker Oats
    6T cocoa
    1 cup coconut
    1/2 cup chopped nuts

    Boil next ingredients together:
    2 cups sugar
    1/2 cup milk
    1 cube butter
    Boil for 3 minutes
    Then add 2 tsps. vanilla

Poor the ingredients into the dry mixture….mix well.
    Form into balls

    No baking involved!! Super simple.

I have favorites I have made every year since I was in high school. I keep them in their own green 3-ring binder. Sorry, can’t share the recipes! I did recently make some Cranberry Bliss bars similar to Starbucks, though, and will leave that with you:

    Cake:
    1C (2 sticks) butter, softened
    1 1/4 c light brown sugar, packed
    3 eggs
    1 1/2 tsp vanilla
    1 tsp ginger
    1/4 tsp salt
    1 1/2 c all-purpose flour
    3/4 c diced dried cranberries
6 oz white chocolate, cut into chunks (or buy white choc chips!)

    Frosting:
    4oz cream cheese, softened
    3C powdered sugar
    4 tsp lemon juice
    1/2 tsp vanilla extract
    1/4c diced dried cranberries

    Drizzled Icing:
    1/2 c powdered sugar
    1 Tbsp milk
    2 tsp vegetable shortening

    1. Preheat oven to 350*F.
    2. Make cake by beating butter and brown sugar together with an electric mixer until smooth. Add eggs, vanilla, ginger, and salt and beat well. Gradually mix in flour until smooth. Mix 3/4 c diced dried cranberries and white chocolate into the batter by hand. Pour batter into a well-greased 9×13″ baking pan. Use a spatula to spread the batter evenly across the pan. Bake for 35-40 min or until cake is light brown on the edges. Allow cake to cool.
    3. Make frosting by combining softened cream cheese, 3C powdered sugar, lemon juice and vanilla extract ina medium bowl with an electric mixer until smooth. When the cake has cooled, use a spatula to spread frosting over the top of the cake.
    4. Sprinkle 1/4 c of diced cranberries over the frosting on the cake.
    5. Whisk together 1/2 c powdered sugar, 1 Tbsp milk, and shortening. Drizzle icing over the cranberries in a sweeping motion or use a pastry bag with a fine tip to drizzle frosting across the top of the cake.
    6. Allow cake to sit for several hours, then slice the cake lengthwise through the middle. Slice the cake across the width three times making a total of eight rectangular slices. Slice each of those rectangles diagonally, creating 16 triangular slices.
    Makes 16 bars.

Yes, yes, I remember meltaway as a kid, and I make them every year while a grown up? Does one really grow up? It is apparent when you see me at the holidays because I’m one big kid. There are so many awesome recipes left for us. I’m coming back.

my mom has been making this recipe for a very long time, and she got the recipe for them from the county cooperative extension service where we live. we call them cream cheese spritz cookies, and you have to have a cookie press to make them. you can purchase them at williams-sonoma or bed, bath and beyond or linens n things. anyway, here’s the recipe. they’re super rich and they make a ton, so doubling is well worth it:

    2 sticks butter (no substitutes!)
3 oz. cream cheese (you can use fat free here without any noticeable difference)
    1 C. sugar
    1 egg yolk
    1 t. vanilla
    2 1/4 C. flour
    1/2 t. salt
    1/4 t. baking powder
    colored sugar sprinkles

Put through the cookie press onto ungreased cookie sheet. sprinkle with colored sugar. shake off excess from baking sheet. bake at 350 for 12-15 min. or until just beginning to golden on the edges.
